Sandy's Yellow Chicken Dip

Sandy's Yellow Chicken Dip and Potato Dip

This recipe came about after I moved here from Holland and missed all my favourite dishes. Such as the satay chicken with chips and mayonnaise that you so love*.

This yellow chicken dip is sold in all the deli shops and supermarkets in the Netherlands. I went into the archives of my mind and had a good think about the flavours that were in it. And this is what I came up with. Very simple and it looks a bit snotty but everyone that dares to try it keeps going until the bowl is empty.

Then there is the other dip in the picture. That is my famous potato dip.

Sandy Kane

  • 1 roast chicken from the supermarket, plucked to pieces
  • 1 jar of corn relish
  • 1 tablespoon of mild curry powder
  • 4 tablespoons of Best Foods or Thomy mayonnaise**

Mix all and serve with crackers and/or crunchy bread.

* Editor's note: If you've ever had the munchies while walking the streets of Amsterdam you'll know how good ‘fries mit mayo’ is! For the uninitiated, this is French fries served in a white cardboard cone, then wrapped in paper, with a spoonful of Dutch mayonnaise sauce on top. Sandy introduced me to this concept before I went to Europe.

** Sandy’s one condition: if you don't use the mayonnaise brand specified, I do not want my name mentioned in relation to this dish. It will not be nice!
